New make is shit. You mention other spirits but it’s also true there, with the exception of tequila which is the only good unadulterated un-aged spirit (when done well). Gin doesn’t count because it’s adulterated The thing is, you can probably make new make good but at that point it would be expensive. You’d had to do really narrow cuts at the very heart of the distillate. Which is a waste to use for new make⏱ 5h↩
