Red quinoa with a sauce of pachino tomatoes and mussels with their broth (EVO oil with infused garlic, chilli peppers, mussels juices, red wine and infused celery), when the sauce became thick I added the sautΓ©ed green zucchini I kept on the side and served with some fresh EVO oil.
